    1. Rinse Poha:

      • Rinse the flattened rice (poha) under running water to remove any impurities. Drain well and set aside.
    2. Tempering:

      • Heat oil in a pan. Add mustard seeds, cumin seeds, and asafoetida. Let the seeds splutter.
      • Add finely chopped green chili and sauté briefly.
    3. Add Poha:

      • Add the rinsed and drained poha to the tempering. Mix gently to coat the poha with the tempering.
    4. Seasoning:

      • Add salt and sugar to taste. Mix well.
      • Optionally, add grated coconut for added flavor.
    5. Roasted Peanuts:

      • Mix in the roasted peanuts.
    6. Garnish and Serve:

      • Add chopped coriander leaves and a squeeze of lemon juice.
      • Garnish with fresh coriander leaves.

    Total Cooking Time:

    Approximately 15-20 minutes.

    Servings:

    This recipe makes about 2-3 servings. Adjust the quantities based on your preferences and the number of servings needed. Serve Jain Poha with a side of plain yogurt or a hot cup of tea.
